I want other cowboys way more than Masked Raider. I would be disappointed to get him before Rawhide Kid, Two Gun Kid, Kid Colt, and Phantom Rider. If Hasbro makes any of these guys, they need to come with their horse.
Man... If Hasbro tooled up one horse - I think we'd get all of those guys you listed plus Ember from the current X-Men run and that Spider-verse horse. They'd want to get their money out of the tooling and there's lots to do. Pop a couple of wing holes in the mold and add Aragorn and Valinor, maybe Brightwind too.
I'd get Batwing and oddly the modern Masked Raider.

So... I'm not overly familiar with Emily Bright and a school age girl in basic street clothes isn't probably something I'm dying to add to my shelf... but that powered up, flaming Dormammu head w/ shoulder armor look isn't too bad... maybe if they did a mix of that - give her the normal, non-Dormy head but the fiery armor and glowy hands I could be down for it.
As for Zeus... yep, big yep. Preferably more like the second image - I like the toga look more than the fully armored look for the Greek pantheon. And I like the virile red haired version of the king of the greek pantheon more than the old, white haired dude or the little kid in those last couple of pictures. And no MCU so no Russel Crowe, thanks. In a pinch I'd take any of the first 4 images as a figure for my shelf, but image 2 would be my favorite choice. Of the Greek pantheon - aside from Hercules who we have already, and Ares, who we have but could use an updated better version of if I'm honest - I don't know how many of the others I'd really have to have. Athena has made a few appearances but I would rather have Thena from the Eternals. Hades would probably be good. But Zeus, him I'd want for sure.
I also don't know Emily Bright, but a quick read looks interesting and a figure could be fun. If they do her more normal civilian look I'd want to see tons of weird magic and spell effects (those books with creatures crawling out would make for really cool accessories!)
Definitely in for Zeus. I'm also more in favor of the green toga look - let the Asgardians be the ones all decked out in magic space armor. Big read beard too, please.

And yes to Emily Bright, I love the Strange Academy kids. But they would probably need to come in a set or wave, at least a few of them. Emily by herself just looks like a teenager but if she's with Doyle Dormammu, Shaylee, Zoe, Toth, etc they look really cool. And it would be a good place to put modern Doctor Voodoo (especially since we have several figures of him now).
I’m definitely in for Zeus, preferably in a handbook/classic attire of some kind. No real specific design as long as it’s not modern.
