The Midgard Serpent would be an incredible display piece. If it was made, Simonson version would be preferred. I don't have the space for this bad boy, but I would be sorely tempted to find some.

Classic Son of Satan and Simonson Midgard Serpent are both a MASSIVE YES!! VERY much want Daimon in that outfit, and while I have no idea where or how I'd display Jormungandr, I'd find a way. I'd not pass that up.

Stacy X in the first pic or maybe the 6th so she would blend in better with the rest of the team from the Casey era.
I know Stacy-X is a not-beloved character from a not-beloved run but I'd absolutely get her in her classic look. I have a soft spot for short-lived characters who represent very specific moments or eras of teams with long histories (like classic Mimic, Proudstar or Shaara Thunderbird, Silverclaw, Lionheart, etc). Stacy-X perfectly captures the early 2000s X-books and would be fun to put on the shelf.
As others have said the Midgard Serpent is way too big for Legends but honestly I wouldn't mind a semi-articulated diorama piece, maybe just neck and head, that would simulate the cover of Thor 380. Gives the character some representation without devouring the entire shelf.
And the forthcoming Daimon Hellstrom DOES NOT remove classic Son Of Satan from the want list. I really hope he happens someday.
Don't know Stacy X and her looks don't hold any interest for me.
Midgard Serpent (Simonson Era, or modern) would be great, but there is no way to do it justice as a full figure. It would just be too big.
Classic Hellstrom would be awesome and I would be all in on that version.

OK... anthropomorphic Tiger Man is an automatic yes no matter what figure line. But a Marvel Legends Man-Eater figure would be all win. I would pre-order multiples and then probably buy everyone I saw on a store peg because I couldn't resist. Like that would be the ultimately irresistible figure for me. So yes, times a hundred.
As for the Contest of Champions morts... absolutely. I loved that book when it came out. Now in hindsight it seems sort of cute and lame and harmless. But back then before anything like it had ever been done - it was a game changer. A mini-series (a what?) that plucked characters from all the major marvel titles (again - what?) and then introduced a whole ton of new international characters ... it felt pretty major in real time. At least to me it did.
It was kind of sad that most of the newly created international characters didn't take root - Le Peregrine, Shamrock, Defensor, Talisman and Blitzkrieg... they didn't make much of a lasting impact on the Marvel Universe, but still they'd make for some fun figures.
Other characters that appeared in the book but were a bigger deal in the MU that we don't have figures of like Arabian Knight, Sabra, the Collective Man would be very welcome in my collection and of course the most important character missing from that line up ... VANGUARD. I want a real figure of Darkstrar's twin brother in the worst way. Give me a Vanguard Hasbro... DO IT!!!

Everyone offered today is an absolute "Yes!", especially the missing Contest of Champions international contingent. Classic looks for them all preferred, and I wholeheartedly echo @panthercult 's call for a classic Vanguard in the most intense possible way. Nicolai is WELL past due. My Winter Guard shelf is sorely missing him.

All the international characters in the Contest of Champions were fun. They would all be welcome in my ML collection. Although some would be prioritized for me. The following order would be my preference.

I'd like a Champion elder to go with them. Heck throw in a classic Collector while you're at it Hasbro.
